One of the most popular ramen styles in Japan has its roots in the 1970s, when former truck driver Yoshimura opened his ramen bistro and began experimenting with combining the popular tonkotsu with traditional Tokyo shoyu ramen. The combination of creamy pork broth with strong chicken brought a completely new approach that experienced a huge boom at the turn of the millennium.
