Unlike in our region, beef broth is quite a rarity in Japan. The so-called gyukai or gyukotsu, as beef ramen is known there, is served in only a handful of restaurants compared to other styles. For us, however, this is the perfect opportunity to blend our tradition with Japanese flavors. With its bold aroma and juicy, tender shredded beef, our beef ramen might remind you of something familiar. At the same time, our special soy sauce-based seasoning and pickled bamboo give it a taste of its distant homeland.
